I am back with a recipe that smells absolutely heavenly! This Lemon Cloud Cake is the definition of light and fresh. I stumbled upon the base of this recipe while searching for the perfect zesty treat on a baking site, and it has quickly become a family favorite in our household.
If you are looking for that perfect balance of citrus tang and a melt-in-your-mouth texture, this is the one. My spouse especially loves how the tartness of the lemon zest cuts through the sweetness.
🛒 What You’ll Need
Eggs: 6 large (whites and yolks separated)
Butter: 250g (room temperature)
Sugar: 2 cups total (split into 0.5 and 1.5 cups)
Yogurt: 1 cup
Lemon: Juice of 1 lemon + zest of half a cup (for that intense aroma!)
Flour: 2.5 cups
Baking Powder: 1 packet
Optional: 1 packet of vanilla or vanilla extract

Prep the Egg Whites: Start by separating your 6 eggs. Add half a cup of sugar to the egg whites and whip them with a mixer until they form stiff, snowy peaks. Set these aside.
Cream the Butter: In a separate large bowl, take your room-temperature butter and add 1.5 cups of sugar. Beat them together until the mixture is pale and creamy.
The Zesty Mix: To the butter mixture, add the egg yolks, half a cup of lemon zest, the juice of one lemon, and the yogurt. Give it a good whisk. If you like that classic aroma, feel free to add a touch of vanilla here too.
